This depends on how you make it. I used two corn tortillas (1 yellow), 1 red container of the pork, a little bit of the cilantro lime topping (considering this part of my red), 1 green of chopped tomatoes, lettuce and pico de gallo, and 1 blue of avocado and shredded cheddar.
You could serve with beans and guacamole too!
I folded these up and ate like tacos. Messy but so yummy!
Pulled Pork Ingredients:
- 3 lbs of Pork Loin
- 1 bay leaf
- 1 1/2 cup of water
Combine these spices for the rub:
- 2 tbsp of chili powder
- 2 tsp of cumin
- 1 tsp of ground coriander
- 1/2 tsp cloves
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sea salt
- 1 tsp oregano
Directions:
Make the rub by mixing all spices together in a a small bowl.
Rub down the entire pork loin with the spices and place in your slow cooker.
Add the bay leaf and water and cook on low for 6-8 hours.
Keep an eye on the pork just to make sure the water doesn't absorb and it dries out.
You can always add more liquid if you need to.
The goal is for the pork to pull apart easily so you can shred it.
Once cooked shred and mix with the juices. If you are using a crock pot liner you will want to remove the pork and shred it on a cutting board and then put back to mix with juices.
Cilantro Lime Topping:
Mix 1/4 cup chopped cilantro, 1/4 lime juice and 1 cup plain Greek yogurt.
I ate with corn tortillas. I sprayed them with coconut spray and heated them up in the toaster oven at 350 for about 5 minutes. The longer you cook the harder they will get so bake to your desired texture.
