Ingredients:
1 lb ground beef
3/4 cup diced onions
1 cup water
1 14oz can of diced tomatoes
1 8oz can tomato sauce
2 cups cooked rice
salt and pepper to taste
3 large handfuls of shredded cabbage
shredded colby jack cheese to taste
Directions:
Season and brown the ground beef and the onions. Drain if necessary but a 93% lean shouldn't need draining.
Stir in the cabbage, tomatoes sauce, diced tomatoes and water.
Let it come to a boil then reduce heat and simmer with cover on for about 15 minutes until cabbage is soft.
Stir in rice.
Serve in bowls and top with desired amount of shredded cheese.
Time savers:
I used Trader Joe's frozen brown rice and heat that up quickly
For cabbage I buy a bag of shredded cabbage or coleslaw mix
