21 Day Fix:
1 red, 1 green, 1/2 blue
Ingredients
2 eggs
1 green container of chopped veggies (such as cherry tomatoes, spinach and broccoli)
1/2 a blue container of cheese (goat cheese and part skim mozzarella for example)
Directions
Spray a skillet with coconut or olive oil spray and heat the pan to medium/high.
Crack 2 eggs into a bowl and mix.
Stir in veggies and cheese.
When pan is hot pour mixture in.
Let it sit a few minutes and either flip to keep flat like a pancake or fold half over into omelette shape.
Cook a few more minutes until firm.
