21 Day Fix per serving:
1 red, 1 green, 1.5 yellow
(I used 1 green and 1 red pepper.)
Ingredients:
1 package chicken sausage, any flavor, sliced
1 medium yellow onion, diced
3 stalks celery, diced
2 green peppers, diced
2 cloves garlic, minced
1/2 teaspoon Herbes de Provence
1/4 teaspoon kosher salt
Dash of black pepper
Dash of paprika
1 15oz can diced tomatoes
1 15oz can red kidney beans, drained and rinsed
2 cups cooked brown rice
Directions:
Spray skillet and heat sausage over medium heat, about 2 minutes
Add onion, celery, peppers, garlic, spices and cook 3-5 minutes
Add diced tomatoes, beans and rice and cook an additional 3-5 minutes until heated through
