Makes 5 servings.
21 Day Fix per serving:
1 red, 1 yellow, 1/2 green
Shown with 1 yellow of brown rice and 1 blue container of avocado and shredded Mexican cheese
I also put a splash of hot sauce on it.
Ingredients:
- 1.5 lbs chicken breast
- 14.4 oz can diced tomatoes with mild green chilies (1.5 green)
- 15 oz can black beans (3 yellow)
- 8 oz frozen corn (2 yellow)
- 1/4 cup chopped fresh cilantro
- 14.4 oz can fat free chicken broth
- 3 scallions, chopped (1/2 green)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp cayenne pepper (to taste)
Directions:
Combine chicken broth, beans (drained), corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Put chicken breasts on top of mixture.
Cook on low for 9 hours or on high for 5 hours (until chicken looks cooked).
Take the chicken out and shred.
Evenly distribute the tomato and bean mixture into 5 containers.
Then put a red container of the shredded chicken into each of the 5 containers.
Serve over 1 yellow of brown rice or quinoa.
Top with favorites such as cheese and avocado. (Picture has one blue container with shredded cheese and avocado)
