So yummy and easy to make. Great for leftovers. Makes 4 servings 21 Day Fix 1 red, 1 green, 1 orange Ingredients: 1 lb ground chicken or turkey 8 sc allions, white and green chopped 1 8oz can water chestnuts, drained and chopped fine 1 red bell pepper, chopped fine ¼ cup reduced sodium soy sauce 2.5 Tbsp hoisin sauce 1 Tbsp ginger from gar or fresh grated 1 Tbsp water 2 tsp sesame oil Large lettuce pieces Directions: In a large pan, brown the chicken over medium-high, breaking up pieces so they are minced. Drain if necessary. Add scallions, water chestnuts, red pepper, soy sauce, hoisin sauce, ginger, water and sesame oil. Cook until scallions and peppers are soft. Scoop chicken mixture into large lettuce pieces. Drizzle with peanut sauce. Spicy Peanut Sauce Ingredients ¼ cup toasted sesame oil 1/2 cup peanut butter 2 Tbsp lemon juice 2 Tbsp honey 1 Tbsp chipotle peppers, diced (I buy these in the taco section in an adobe sauce) ½ cup water Directions: Add water and all ingredients in to blender and blend. Add more or less water for desired consistency. |
