Each serving: 1 red, 1 yellow, 1/2 green, 1 blue
Scoop into five equal size containers so you know your portion.
Ingredients:
4 yellows brown rice pasta cooked
2.5 greens spinach
1 egg
1/2 red ricotta cheese
4 reds of chicken cubed and cooked
1 tsp garlic powder
Salt and pepper to taste
5 blues of shredded cheddar cheese
1/2 yellow whole wheat bread crumbs
4 ounces of low fat milk
Directions:
1. Preheat oven to 350
2. Cook pasta Al dente about 5-7 minutes
3. Drain pasta and add back to pot
3. Add spinach, 4 blues of cheese, ricotta cheese and stir.
4. Next, stir in egg, salt, pepper, milk, and garlic powder.
5. Then add chicken and mix.
6. Place entire mixture into a glass tray and sprinkle the remaining blue of cheese as well as bread crumbs on top
7. Bake approximately 15-20 minutes until cheese is melted
