Serves 4
The quinoa and the hummus was a delicious combination.
21 Day Fix per serving:
1 red, 1 yellow, 1 blue and 1 green
Ingredients:
1/2 cup chicken broth
2 T. lemon juice
1 T. honey
1 T. dried oregano
1 T minced garlic
1/2 tsp onion powder
1 sliced red onion
1.5 lb chicken cut into cubes or strips
Cooked Quinoa
Hummus
Cut up tomatoes, cucumbers and red peppers
Directions:
Combine first 6 ingredients and place in to slow cooker
Add in the onions and chicken
Mix it all together.
Cover and cook high for 2-4 hours or low 4-6, or until chicken is cooked through.
Smaller pieces will cook quicker so adjust cooking time based on size
In each bowl place a serving of quinoa (or 1 yellow container) and top with 1/4 cup (or 1 blue container) of hummus.
Spoon 1/4 of the chicken and onions mixture onto quinoa.
Top with tomatoes, cucumbers and red pepper strips if desired.
