Ingredients:
1 yellow onion, finely diced
2 tsp. ground cumin
1 tsp. ground cinnamon
1/2 tsp. salt
3/4 dried green/brown lentils, soaked in water overnight (if possible)
2 cups low sodium chicken or vegetable broth
14 oz. no salt diced tomatoes
1/4 cup raisins
6-9 oz. baby spinach
Directions:
Place all ingredients except spinach is slower cooker (don't forget your liner) and cook on high for 2.5 hours. Turn off the slow cooker and stir in the spinach. Put the cover back on and the spinach will wilt in about 10-15 minutes.
