Ingredients:
1 tablespoon olive oil
1 package 12 oz full cooked chicken sausage, sliced (any flavor)
2 teaspoons minced garlic
1 can cannellini (white kidney beans), drained and rinsed
1 14.5 oz can low-sodium chicken broth
1 14.5 oz no salt diced tomatoes
1 container baby kale (the kind that is ready for soups and salads)
salt and pepper to taste
Directions:
1. Heat oil in large sauce pan over medium. Add sausage to brown about two minutes.
2. Stir in garlic and heat another two minutes.
3. Add beans, broth, tomatoes with liquid and bring to boil.
4. Add kale and salt/pepper to taste. Stir and heat until the kale is wilted. About 3 minutes.
