I love chocolate and I love to snack but in an effort to snack clean I started making these delicious treats. I use raw cacao which is an amazing superfood. Some of its benefits include: immune system booster, more antioxidants than blueberries, contains calcium, iron and magnesium and it's a mood booster!
Raw cacao is totally different than cocoa. Cocoa is chemically processed and roasted which destroys the amazing benefits of raw cacao. Make sure you buy raw and organic. ENJOY!!
INGREDIENTS
• 1½ cups raw pecan or walnut halves
• ¼ cup raw cacao powder
• 1 teaspoon pure vanilla extract
• ¼ teaspoon Himalayan sea salt
• 1 cup soft dates, pitted (about 10 Medjool dates)
• 1 tablespoon water
•
• Optional:
• Additional cacao powder, for coating
• Goji berries, chopped nuts, unsweetened shredded coconut would be great options for toppings
INSTRUCTIONS
1 In a large food processor fitted with an "S" blade, grind the nuts into a fine meal. Add in the rest of the ingredients, and process again until a sticky, uniform dough is formed. Scoop the batter by heaping tablespoons onto a plate or baking sheet lined with parchment paper, to prevent sticking. Roll the balls between your hands.
2 You could coat them with cacao power or use roll them into the other toppings listed above.
3 Store the balls in the freezer.
